

chickpea blondies:
A good source of carbohydrate and protein to keep you sustained on a long day out on the hills. With the option to make them vegan and even gluten free, these make for a excellent homemade snack that won't break the bank.
To keep them fresh, cover them with a plastic-free beeswax food wrap (which will save space in your pack) or a reusable plastic container.
recipe:

1 regular tin of chickpeas (keep 3 tbsp of drained liquid)

120g of Butter (or plant spread)

150g of Brown Sugar

1 tsp vanilla or almond extract

1/2 tsp of baking soda

pinch of salt

150g of plain flour
-
75g of chocolate chips (dark or milk)
directions:

Preheat oven - 175 degrees celsius

Lightly Grease a 8x8 baking tin

Melt the butter in a saucepan and leave to cool
-
Process together chickpeas, reserved liquid, melted butter, extract, baking soda and sugar - aim for a relatively smooth batter

In a large bowl stir in the flour to the mixture and fold in chocolate chips

Transfer to the tin and bake for 23-25 mins

Leave to cool before cutting into chunks
